KURA ONE®Kajokotobuki Yukimegami Junmai-daiginjo undiluted (180ml)*1

This "Kajokotobuki (Yukimegami)" is a Junmai (pure rice)-daiginjo undiluted sake made from the finest sake rice "Yukimegami" produced in Yamagata Prefecture, polished luxuriously up to 60%. It is brewed with Yamagata yeast and underground water from the Zao Mountain Range, resulting in a refined and delicate aroma of Ginjo and a soft, transparent, and pure taste of the original sake. It is made without using any added rice (kakemai) and uses only rice for koji, employing the traditional method of brewing with all rice, which requires a lot of time and effort, to create a rich and mellow flavor.

This "Hyakusyun (Minonishiki)" is an uncharcoaled Junmai (pure rice)-ginjo sake brewed with the precious sake rice "Minonishiki," which is only produced in the vicinity of Mino City, polished up to 40%, and brewed with the sweet and mellow underground water of the Nagara River. When poured into a glass, it exhibits a light and fruity aroma that slowly expands. It has a fresh taste unique to unfiltered sake, with a smooth and crisp finish. It can be enjoyed with various dishes such as sashimi, grilled fish, traditional Japanese cuisine, as well as Western cuisine using cheese and oil.

This "Amabuki (Shakunage-yeast)" is a Junmai (pure rice)-daiginjo sake brewed using the Shakunage flower yeast and polished Yamadanishiki rice up to 40%. It is made with the traditional method of "Kimoto-zukuri" where the yeast starter is manually prepared and then stored in a refrigerator at 0°C for two years before shipping. The resilient Shakunage yeast, surviving in a harsh environment, creates a wonderful taste and elegance, offering a rich and complex acidity akin to an orchestra, along with the lightness and elegance unique to Kimoto-zukuri.

This "Nanbubijin" is a Tokubetsu-junmai (pure rice) sake brewed by the collaboration of a sake brewery and local farmers, using the exclusive rice variety "Ginotome" from Iwate Prefecture, which has been polished luxuriously up to 45%. You can experience the ultimate terroir created by the rice from Ninohe, the pristine underground water from the Orizumebasenkyo in Ninohe's prefectural natural park, and the craftsmanship of Nanbutoji (sake brewer) from Ninohe at the brewery in Ninohe. It has a gentle fruity aroma, elegant rice flavor, and a refreshing aftertaste.
