From this high-quality sake rice, the sake brewer selects the variety and region that best suits the quality of sake he is aiming for. Among sake brewers who are particular about the rice used to make their sake, Sanwa shuzo (Sake brewery) in Shizuoka Prefecture has garnered much attention for its motto, "Sake with a variety of tastes and aromas from different rice varieties. The brewery uses a variety of sake rice grown by contract farmers in various regions of Japan to create sake that makes the most of the characteristics of each rice variety. Currently, Sanwa shuzo uses more than 10 varieties of sake rice. Among them, we have selected sake made from the three major varieties of sake rice and Shizuoka Prefecture's original sake rice.

"Gohyakumangoku," loved by many breweries alongside Yamadanishiki, is said to be a sake rice that produces a refreshing and dry taste from Niigata. This "Garyubai (Gohyakumangoku)" is a Junmai (pure rice)-ginjo sake that has a slightly firm rice texture, ensuring a clear and refreshing sake with a mild flavor.
