Nanbubijin

Nanbubijin was founded in 1902 in Ninohe City, present-day Iwate Prefecture, and has inherited the refined techniques and traditions of the Nanbu Toji, one of the top three toji clans in Japan. The name Nanbubijin, which is both the company name and representative brand name, was chosen in 1951 to express the company's desire to produce beautiful sake and to represent the region's wonderful nature and climate, known as "Nanbu no Kuni," in the midst of a nationwide trend toward sweet sake with a low rice polishing ratio and a lot of cloying taste.

 

Ninohe Terroir sake is made mainly from Iwate Prefecture's original rice suitable for sake brewing, brewed with subsoil water from Orizume-Basenkyo, a prefectural nature park, and carefully selected in the processes of koji, sake mother, moromi, shibori, and hi-ire, which bring out the characteristics of sake. It has won numerous awards in domestic and international competitions, and has been used in first and business class airline flights as well as at the G20 Summit.

Iwate Prefecture has the largest area in Honshu and is the most heavily forested prefecture in Honshu. There are few flat areas in the prefecture, and most of the land is covered by "mountains," an environment that fosters values of living in harmony with nature.

 

Ninohe City is located in the northernmost inland part of Iwate Prefecture and is about 90% hilly, with an average maximum temperature of 28.2°C in August and 1.7°C in January, and a cool climate throughout the year.

 

Ninohe City is famous for its domestic lacquer production. Domestic lacquer is used in the restoration of important cultural properties in Japan, 70% of which is "Joboji lacquer" collected in the Ninohe area.

 

The unique climate, with the lowest rainfall in Iwate Prefecture, allows for the cultivation of rice and cereals, and the production of brand-name poultry such as "Abedori" and " Saisaidori" raised in high-quality water, and brand-name meat such as "Tankakugyu," a lean Japanese beef raised in natural pastureland, also flourishes.
