Sake has a wide range of unique flavors, depending on the ingredients, production methods, and breweries' particular tastes. Among these, the expressions "sweet" and "dry" have been used since the Edo period and are representative of the taste of sake. In the 1980s, there was a boom in "light, dry" sake with a refreshing taste, and the image of "dry = refreshing = delicious sake" took root. Recently, however, the term "dry" has come to mean a variety of flavors.

 

The appeal of dry wine is its compatibility with meals. Because of its low sugar content, it does not interfere with food and enhances the flavor of the ingredients. The light, refreshing dry style goes well with lightly seasoned dishes that make the most of the flavors of the ingredients, while the rich, mellow dry style goes well with dishes that are rich in seasonings and have a strong flavor. For this issue, we have selected dry sake from sake breweries in Tohoku, Kansai, San'in, and Kyushu. The word "dry" in a single word can mean a wide variety of flavors. Enjoy these unique dry sake.

KURA ONE®Harushika Extra dry Junmai (180ml)*1

This "Harushika (Extra Dry)" is an ultimate extra dry Junmai (pure rice) sake brewed by the Imanishiseibee shoten, a store that has been preserving the high-quality sake of the traditional brewing method "Nanto Morohaku" in Nara, the birthplace of Japanese sake, for over 35 years. Despite its Japan Sake Meter Value of +12, it perfectly harmonizes a refined aroma, richness, and a delicate flavor that showcases its sharpness. It is an excellent sake to bring out the umami of various ingredients and truly shines as a sake to accompany meals.

KURA ONE®Yonetsuru Extra dry Junmai (180ml)*1

This "Yonetsuru (Extra dry)" is a light and dry junmai (pure rice) sake that achieves a balance of the "richness of junmai sake" and a "sharp and clear finish" by fermenting the moromi (mash) for a longer period compared to regular brewing. This brewery practices "sake brewing from rice cultivation," and this product is brewed using "Dewakirari" rice from Yamagata Prefecture, polished up to 35%. The umami of the rice and a firm acidity harmonize well, resulting in a spicy yet flavorful taste. The well-balanced umami subtly asserts itself. It can be enjoyed with a wide range of dishes, including meat dishes.
