Why should you take it?
Fruity acidity to enjoy the taste of seafood.
The food environment and food culture in which they were born and raised are the foundation on which the uniqueness of sake is built. Sakaiminato in Tottori Prefecture, famous for Matsuba crab, one of Japan's three major crab brands, is a prime example. We asked the Chiyomusubi shuzo, which has a brewery in this fishing port town, for a 'fruity sake with the flavour of seafood', and the sake they suggested was Chiyomusubi Gohyakumangoku Junmai.
This sake is made from Gohyakumangoku harvested in Tottori Prefecture and is a refreshing junmai sake with a clean, crisp taste. Its citrusy aroma, medium concentration and crisp mouthfeel complement the flavour of seafood. The lingering finish is crisp, and the refreshing sensation down the throat is truly first class.
Particularly good with sweet-tasting seafood such as crab, squid and scallops. When enjoyed chilled, the flavour of the seafood is enhanced even further. This sake, which can truly be described as "Junmai-shu grown in a port town & fish town", is a recommended product for those who seek harmony between food and sake.

This "Chiyomusubi (Gohyakumangoku)" is a Junmai (pure rice) sake made using Gohyakumangoku rice produced by contracted farmers in Tottori Prefecture. To preserve its flavor, it undergoes careful bottle pasteurization to ensure the aroma is not compromised. By blending aromatic yeast, it has a vibrant fragrance reminiscent of melons and apples. It delivers a clean attack on the palate followed by a memorable richness that expands in the aftertaste. It pairs well with dishes like sautéed fish and grilled chicken.

Brewery
Chiyomusubi Shuzo
Located in Sakaiminato, Tottori Prefecture, the Chiyomusubi Brewery was founded in 1865. Facing a fishing port, the brewery takes advantage of its geographical location to develop its sake production with a particular focus on food pairing experiences.
In sake brewing, the main ingredient is Tottori's speciality sake rice 'Goriki', and the brewery uses local rice and rice malt, and soft water from the Chugoku mountain range for the brewing water. The aim of the sake quality is to produce a rich, light and dry sake, characterised by a deliciously sharp taste that brings out the flavour of the rice from Tottori Prefecture.
In addition to traditional sake, the Chiyomusubi Brewery has ventured into new areas, such as the Chiyomusubi SORAH awa sake sparkling, an authentic sparkling sake with second fermentation in the bottle using the champagne process, the craft gin Impact, which applies distilling techniques developed in shochu production, and the production of whisky.

Sakaiminato / Tottori
Sakaiminato City in Tottori Prefecture is known as the birthplace of Shigeru Mizuki, author of Gegege no Kitaro. The "Kitaro Train" on the JR Sakai Line and the "Mizuki Shigeru Road" are spread out like a Gegege no Kitaro theme park.
Sakaiminato faces the Sea of Japan and is particularly famous for its premium Matsuba crab, which is landed in winter. The Marugoto Sakaiminato Market is popular with tourists, where they can enjoy fresh seafood, local specialities and souvenirs.
The Yumeminato Tower is also certified as the 'lowest' tower in Japan with a height of 43 metres. It has a magnificent three-tier dome structure of steel, wood and glass, and is highly regarded as the world's tallest structure using a 'tensegrity' structure.
