Q. WHAT KIND OF SAKE IS SAKE?
Sake is a brewed alcoholic beverage made with rice and water as the main ingredients using Japanese brewing techniques.

Those who are new to sake may think that alcohol made from only rice and water has only a single taste and aroma, and that it does not offer a wide variety of taste and aroma. However, there are surprisingly large differences depending on the ingredients (rice and water), the way the rice is polished, and the production method. It also depends on the period of maturation. The temperature at which sake is drunk and the glass in which it is served can also greatly expand the range of sake.

There are approximately 1,200 sake breweries in Japan, with approximately 10,000 to 30,000 products. In recent years, the market has been appreciating "nama-zake" (unpasteurized sake) and "koshu" (aged sake), and there are also "kijo-zake" (thick sake made with sake instead of water) and "sparkling sake" (clear sake with secondary fermentation in the bottle using a method from Champagne, France). Sparkling sake, which is produced by secondary fermentation in the bottle using the French Champagne method and is also transparent, has also been created.

Q. HOW DO YOU STORE SAKE?
Sake should be stored in a cool, dark place. Sake's natural enemy is ultraviolet light. Sake deteriorates when exposed to direct sunlight, giving it an odor similar to that of onions or leeks.

STORING SAKE IN AN ENVIRONMENT EXPOSED TO FLUORESCENT LIGHT IS ALSO DANGEROUS; USE LIGHTING WRAPPED IN UV-CUT FILM, EMPLOY SPECIAL LIGHTS THAT DO NOT EMIT UV RAYS, OR WRAP THE SAKE IN NEWSPAPER.

When storing sake for a long period of time in order to enjoy its maturation, please assess the nature of sake and manage it correctly.
Q. WHAT IS THE ALCOHOL CONTENT OF SAKE?
Most sake has an alcohol content of around 15 degrees C. There are also sake with an alcohol content of 18 to 19 degrees C, and sake with an alcohol content of 8 to 9 degrees C. The difference in alcohol content by one degree makes a difference in the way one feels when drinking sake. A one-degree difference in alcohol content will give you a different sensation when drinking sake. Please pay attention to the alcohol content when comparing sake.

Under Japanese law, sake can be called "sake" if it contains less than 22% alcohol by volume.
Q. WHAT ARE THE INGREDIENTS OF SAKE?
The main ingredients for sake are rice, rice malt, and water. In Japan, there are more than 120 varieties of rice used specifically for sake brewing, and some sake is made from edible rice. Depending on the choice of rice, there are differences such as "deep-flavored sake" and "light sake with a delicate aroma.

Yellow koji is mainly used for rice malt, but white koji and black koji can be used to produce sake with a unique acidity.

About 80% of sake is made from water. Two-thirds of Japan is forested. In some places, water that is 100 years old still gushes out. Water in Japan is generally soft, but the hardness varies. Depending on whether the water is soft, medium-hard, or hard, the mineral content varies, and some sake tends to be mellow on the palate, while others tend to be thick and dry.
Q. WHAT DOES "MILLING RATIO" MEAN?
The process of polishing rice is part of the sake production process. Polishing is the process of removing the top layer of rice. The percentage of rice remaining is indicated as "milling ratio. For example, "milled rice ratio 30%" means that 70% of the rice is polished and 30% remains. Note that "milled rice ratio 30%" does not mean "polished rice ratio 30%. Also, be aware that the term "alcohol content" may be mistaken for "alcohol content" when looking at the label.

Even with the same sake rice, there is a difference between "fruity sake" and "sake with a complex flavor" depending on the degree of rice polishing. Why not check the rice polishing ratio when enjoying the individuality of sake?
Q. WHAT IS THE TEMPERATURE RANGE FOR ENJOYING SAKE?
In Japan, there are specific expressions to describe the temperature range at which sake is enjoyed. For example, hot (50-55°C), top-heated (45-50°C), lukewarm (30-40°C), flower-cooled (10°C), and snow-cooled (5°C).

SAKE RESPONDS TO A DETAILED RANGE OF TEMPERATURES, AND HAS ITS OWN INDIVIDUALITY IN THE WAY THE AROMA OPENS UP AND THE FLAVOR MELLOWS OUT. EACH SAKE HAS ITS OWN TEMPERATURE RANGE, SO PLEASE REFER TO THE SAKE EXPERT AND THE BREWERY'S COMMENTS TO GET A SENSE OF THE SAKE'S INDIVIDUALITY.
Q. DOES SAKE HAVE AN EXPIRATION DATE?
GENERALLY, SAKE WILL NOT SPOIL IF IT IS UNOPENED. THIS IS BECAUSE MOST SAKE IS MADE THROUGH A PROCESS CALLED HI-IRE, WHICH STOPS MICROBIAL ACTIVITY AND PREVENTS FURTHER FERMENTATION. UNPASTEURIZED SAKE, IF STORED PROPERLY (IDEALLY BELOW -5°C), WILL AGE SLOWLY AND DEVELOP A FULLER FLAVOR.

However, if the package is opened or not properly sealed, it may become contaminated with airborne fungi. Please be careful when storing.
