Hyakusyun Minonishiki Junmai-ginjo undiluted without charcoaled from Kosaka Shuzojo is a junmai-ginjo sake with a rich and mellow flavor. This sake is brewed with locally grown Minonishiki and Nagara River subsoil water, which is rich in organic minerals.
Since water accounts for 80% of the main ingredients of sake, and since water plays an important role in dissolving rice, the individuality of "water" is an important factor in forming the "character" of sake. The underground water collected on the premises of the Kosaka Shuzojo has a slightly sweet and mellow taste in the mouth.
This sake is without charcoaled and, moreover, undiluted, allowing you to directly enjoy the complex flavor of the freshly pressed sake. This sake is a direct taste of the Mino climate, and is truly a sake that allows you to enjoy the local flavor to the fullest.

This "Hyakusyun (Minonishiki)" is an uncharcoaled Junmai (pure rice)-ginjo sake brewed with the precious sake rice "Minonishiki," which is only produced in the vicinity of Mino City, polished up to 40%, and brewed with the sweet and mellow underground water of the Nagara River. When poured into a glass, it exhibits a light and fruity aroma that slowly expands. It has a fresh taste unique to unfiltered sake, with a smooth and crisp finish. It can be enjoyed with various dishes such as sashimi, grilled fish, traditional Japanese cuisine, as well as Western cuisine using cheese and oil.

Kosaka Shuzojo
Kosaka Shuzojo, founded in 1772, is located in Mino city, famous for its "Udatsu-lined streets." The main building of Kosaka Shuzojo, which is still in use today, was built in the year of its founding (1772) and is designated as an important cultural property of Japan The sake brewery that runs from the main building to the rear still retains the architectural style of the Edo period.
Kosaka Shuzojo is particular about the Nagara River subsoil water that flows through the Mino area and local rice. They are dedicated to expressing the local climate in its sake.
The Nagara River subsoil water taken from the premises contains abundant organic minerals, and by using this water, sake is produced that conveys the aroma and flavor of the rice. Kosaka Shuzojo is dedicated to small-lot production and produces sake with brand names such as "Hyakusyun" and "Sanyaho" that reflect the local climate.

Mino / Gifu
Mino City, Gifu Prefecture, is located in the center of Japan. It is famous as a production center of Mino washi paper and as an urban area with Udatsu-lined streets.The production of washi paper requires good quality cold water and an abundance of raw materials. Mino washi has been made for 1,300 years, and the Nagara and Itadori Rivers that flow through the Mino area are of excellent water quality.
Udatsu" refers to "firewalls," and only the wealthy could afford to build such houses. The Mino area is lined with Udatsu-lined merchant houses built in the Edo period (1603-1867), and visitors can enjoy a stroll through the area as if stepping back in time. Don't miss the Kosaka Family Residence, a sake brewery designated as a national important cultural property, and the former Imai Family Residence, a city-designated cultural property.
Every year in October, the "Mino Washi Light Art Exhibition" is held, in which light art works made of Mino washi paper are displayed in the Udatsu-lined streets, allowing visitors to enjoy a fantastic time.
