Richness and gorgeous aroma unique to Hiroshima's soft-water brewed sake.

Focusing on the characteristic of Hiroshima sake - soft-water brewing - we present you with a fruity, rich-tasting sake. I chose Senpuku Junmai-daiginjo undiluted without charcoaled.


Miyake Honten's Senpuku brand is brewed with subsoil water (soft water) from the granite of Hiroshima. Soft water is said to be difficult for fermentation to proceed, so the koji is carefully nurtured and care is taken to ensure that the koji is spread throughout the rice. This process causes the rice to saccharify and produces an aromatic, rich and thick flavour.


This time, I chose the undiluted sake without charcoaled from Senpuku brand. The miscellaneous flavours of the pressed sake could be enjoyed as part of its character. Senpuku Junmai-daiginjo undiluted sake without charcoaled has a gorgeous aroma reminiscent of fresh apples, a sweet, full flavour and a refreshing finish. I hope you enjoy this gentle drinking experience.

This "Senpuku" is an undiluted without charcoaled sake made from locally sourced rice from Hiroshima Prefecture and Hiroshima yeast carefully selected by the brewer. It is a pure rice sake that emphasizes local ingredients. With no dilution and charcoaled, you can enjoy the fresh original taste of sake. When you take a sip, it has a vibrant aroma reminiscent of fresh apples, a sweet and rich flavor, and a refreshing aftertaste.

Brewery

Miyake Honten

Miyake Honten, located in Kure City, Hiroshima Prefecture, was founded in 1856. The water used by Miyake Honten is Haigamine subsoil water, which is filtered by the granite of the Chugoku Mountains. This soft water contains just the right amount of minerals and has a soft, mild taste that mellows out the sake.


It is made mainly from sake rice grown in the magnificent nature of northern Hiroshima and carefully brewed using the soft-water brewing method, which gives it a mellow taste.


The flagship brand, Senpuku, was named after the first generation's mother and wife out of gratitude to them.
